And to start our 2025 offerings, I have sourced 2 “Winter Warmer” type recipes that are currently very popular, one of which is Vegan:
One-Pot Sausage, Kale & Gnocchi Recipe
This hearty one-pot meal is perfect for a cosy dinner and is packed with flavour! The combination of sausage, nutritious kale, and tender gnocchi creates a delicious dish that is both satisfying and easy to prepare. Let’s get cooking!
Ingredients
400g (14 oz) sausage (Italian sausage works great, but feel free to use your favourite)
250g (9 oz) gnocchi (store-bought or homemade)
200g (7 oz) fresh kale (washed and chopped, stems removed)
1 medium onion, chopped
2 cloves garlic, minced
1 cup chicken or vegetable broth
1 can (400g) diced tomatoes (with juices)
1 tablespoon olive oil
1 teaspoon Italian seasoning
Salt and pepper to taste
Parmesan cheese (for serving, optional)
Directions
Cook the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage, breaking it apart with a spoon as it cooks. Sauté until the sausage is browned and cooked through about 5-7 minutes. If using casings, remove them before cooking.
Add Aromatics: Once the sausage is nicely browned, add the chopped onion to the pot. Sauté for 3-4 minutes until softened, then add the minced garlic and sauté for an additional minute, until fragrant.
Stir in the Tomatoes and Broth: Add the diced tomatoes (along with their juices) and the chicken or vegetable broth to the pot. Stir to combine, then bring the mixture to a simmer.
Add Gnocchi and Kale: Once your mix is simmering, add the gnocchi and chopped kale to the pot. Sprinkle in the Italian seasoning, and season with salt and pepper to taste. Stir gently to combine all the ingredients.
Cook Until Tender: Allow the mixture to simmer for about 5-7 minutes, or until the gnocchi is cooked through and the kale is tender. Stir occasionally to prevent sticking.
Serve: Once everything is well combined and heated through, take the pot off the heat. Serve in bowls and top with grated Parmesan cheese, if desired.

Ingredients
3-4 medium parsnips, peeled and cut into bite-sized chunks
1 can (400g) chickpeas, drained and rinsed
1 can (400ml) coconut milk
1 large onion, chopped

1 tablespoon fresh ginger, grated or finely chopped
2 tablespoons curry powder (or to taste)
1 can (400g) diced tomatoes (with juices)
2 cups vegetable broth
2 tablespoons olive oil
Salt and pepper to taste

Cooked rice or quinoa (for serving)
Directions
